Smithfield Market is the largest wholesale meat market in the UK and butcher photography within the market’s confines is strictly permit-only.

With a history dating back to 1794, Keevil and Keevil are the oldest wholesalers in Smithfield. So it was a great privilege to be commissioned by them to photograph the market at night and to be granted behind-the-scenes access to the‘cutting rooms’ where huge carcasses of beef, pork and lamb are prepared for onward sale.
